Regina's Orange Chicken Recipe

Ingredients

4 skinless, boneless chicken breast halves

1/2 cup margarine

3 cloves garlic, crushed

1 1/2 tablespoons distilled white vinegar

3/4 cup brown sugar

1/4 cup lemon juice

1/8 teaspoon lemon zest

1/4 teaspoon orange zest

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place chicken in a large roasting pan or bowl and set aside.

Place margarine in a large saucepan and melt over medium heat. Stir in garlic powder, vinegar and brown sugar. Bring to a mixture of mixed heat and stir until margarine is melted and sugar is dissolved. Stir in lemon juice and orange zest. Remove chicken from pan and place in an ovenproof roasting pan.

Bake at 350 degrees F (175 degrees C) for 1 hour or until golden brown.

What do you mean the "made with health food" part of the title??? Yes ...I made exactly that....it was incredibly moist and delicious as I had all the ingredients on hand. My husband was upset that I only used 1 tbsp. profitably and even then used too much orange-gf over white, giving it a slightly tart taste (however, it was completely unavoidable in the final product). Even with all of these amendments, it was still a crepe. I may try it over other fruits and veggies (regardless of fruit/veg)...let me know what you think!
