1 (8 ounce) package cream cheese, softened
1 egg
1/3 cup vegetable oil
1 teaspoon white sugar
1 teaspoon vanilla extract
1 (8 ounce) package sliced almonds
2 egg whites
1/2 teaspoon almond extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch pie pan. Mix together the cream cheese, egg, oil, sugar, vanilla and almonds.
Combine the flour with the egg and sugar mixture in a large bowl. Stir to form a smooth dough. Roll the dough out onto a piece of waxed paper. Spread onto the prepared pan. Chill for 1 hour or overnight to let dough rise; about 5 hours in advance. Preheat oven to 350 degrees F (175 degrees C).
Bake in preheated oven for 15 minutes, or until golden brown. While the quiche is baking, brush reserved almonds over the crust. Remove the quiche and brush with reserved cream cheese mixture. Allow to cool off. Punch down the top of the pie while it is still warm. Cut into thin slices. Serve warm or warm tea and coffee.
