1 (16 ounce) can sliced peaches, drained
1 cup chopped pecans
1 1/2 cups sliced fresh orange
1 teaspoon lemon juice
1/2 teaspoon lemon zest
2 teaspoons butter or margarine, melted
In a medium bowl, mix peaches, pecans, orange slices, lemon cake and lemon zest until well blended.
Stir the lemon juice and lemon zest into the peach mixture. Mix in melted butter, then pour mixture into a shallow dish or glass dish.
Sprinkle peach mixture with almonds.
Cover peaches and pineapple with lemon glaze, and refrigerate hours. You do not want to over-bake peaches, or they will be bitter.
