Smoked Salmon Recipe

Ingredients

1 tablespoon vegetable oil

1 large carrot, cut into 1/2 inch slices

1 small onion, cut into 1 inch slices

1 medium radish, cut into 1/2 inch slices

1 medium medium head garlic, trimmed and diced

1 medium carrot, cut into 1/4 inch slices

1 medium onion, cut into 1/2 inch slices

1 medium peeled jalapeno pepper, seeded and minced

1 package taco seasoning mix

1 (8 ounce) can smoked salmon, drained

1 pinch ground black pepper to taste

Directions

Heat oil in glass baking dish. Saute carrot slices and onion slices until crisp, about 5 minutes. Stir in radish and garlic. Saute carrot, onion, jalapeno pepper and taco seasoning until vegetables are just tender, about 5 minutes.

Place salmon in pan; add 1/2 cup water and stir to keep salmon from sticking. Pour mixture over salmon and sprinkle with taco seasoning.

Bake 30 to 35 minutes or until salmon flakes easily with fork.

I don't eat chili but my husband said these were good. He didn't really get the point (he was taking it as a joke) but I did get the full effect. I made a little extra sauce and put the shredded cheese and meat back in the fridge while I made the chili. I could see myself making this again.
