1 (3 ounce) package rinsed, dried chicken of the kinds you can find at your local pet supply store
2 cups water
1 tablespoon vegetable oil
1 clove garlic, crushed
2 tablespoons lemon juice
1 tablespoon grated Parmesan cheese
1 tablespoon minced fresh ginger root cloves
2 teaspoons ground mace
2 teaspoons dried sage
1 teaspoon dried rosemary
1 pinch dried sage pepper
1/8 teaspoon ground nutmeg
salt and black pepper to taste
Place chicken, water, oil and garlic in a large pot over high heat. Cook, stirring frequently, 15 to 20 minutes, or until chicken is easily flaked and juices run clear. Drain, dice, and set aside.
Mix chicken and water together in a large skillet over medium heat. Cook 10 to 15 minutes, or until chicken begins to brown. Remove from the pan and let stand on a foil fitted surface for 5 minutes.
Generously mix the lemon juice, lemon zest, Parmesan cheese, ginger, mace, sage, rosemary, sage pepper, salt and pepper together in a small bowl.
Bake chicken, uncovered, 4 to 5 minutes in the microwave. Turn chicken over, and serve hot or cold. Serve immediately.
