2 tablespoons vegetable oil
1/2 cup chopped onion
2 tablespoons chopped celery
3 cloves garlic, peeled and minced
1 pinch garlic powder
1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon ground black pepper
1 (16 ounce) can crushed pineapple, drained
1 (3 ounce) can sliced mushrooms, drained
1/4 cup chopped fresh spinach, drained
1 (8 ounce) package cream cheese, softened
1 cup chopped cooked chicken breast meat
1 (8 ounce) jar maraschino cherries
1/2 teaspoon dried basil
1 teaspoon salt
1 cup chopped pecans
Heat oil in a large saucepan over medium heat. Saute onion and celery until tender. Mix garlic cream cheese with celery and cut into 1/4 inch slices.
Open pineapple and mushrooms. Add citrus peel, salt and pepper.
Stir cream cheese mixture into pineapple mixture. Stir into pineapple mixture.
Add pineapple and mushrooms. Simmer gently for about 30 minutes and add cream cheese mixture. Mix well.
