1 (10 ounce) package egg noodles
8 ounces spicy Mexican street sausage
1 small onion, diced
3 large tomatoes, diced
1 small green bell pepper, diced
1 (8 ounce) can condensed cream of mushroom soup
1 (15 ounce) can sliced mushrooms
1 stalk celery, diced
1 medium potato, diced
1/4 cup olive oil
2 tablespoons chopped fresh parsley
1 1/2 tablespoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 tablespoons chili powder
1 1/2 teaspoons hot pepper sauce
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix sliced onion and tomato. Drain and place in a 1-quart casserole dish. Sprinkle with sausage, onion, tomatoes, bell pepper, cream of mushroom soup, mushrooms, celery, potato, olive oil, parsley, chili powder, cumin and salt. Layer with sausage mixture and flour tortilla. Chill overnight and serve.
