1/2 cup butter flavored shortening
1/2 cup white sugar
2 eggs
1/2 cup lemon zest
1/2 cup lemon juice
2 cups apples, halved and seeded
1 teaspoon lemon extract
1/4 teaspoon salt
2 cups crushed cornflake crumbs
1/2 teaspoon ground cinnamon
1/8 teaspoon ground turpentine
1/2 teaspoon dry mustard
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
1/4 cup lemon juice
1/4 cup brown sugar
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round pans.
In a skillet, melt shortening. Mix white sugar and eggs. Mix lemon zest, lemon juice, apples, lemon extract, salt, cornflake crumbs, lemon extract, lemon juice, brown sugar, whipped cream, lemon zest and lemon juice in a small bowl. Drop by rounded spoonfuls onto prepared pan.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool cake completely.
