1/2 cup butter or margarine, softened
1 (16 ounce) package flaked coconut
1/2 cup honey
2 eggs
1 teaspoon grated orange zest
1 cup sifted confectioners' sugar
2 tablespoons margarine
1 1/2 teaspoons vanilla extract
2 tablespoons rum
5 tablespoons distilled white vinegar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon whipped cream
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
In a large bowl, cream butter and sugar until light and fluffy. Mix together the honey, eggs, orange oil, bourbon, confectioners' sugar and margarine. Combine the honey mixture, orange peel mixture, egg mixture, cream, crushed ice cubes, whipped cream and rum. Pour mixture into prepared pan.
Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of the loaf comes out clean. Allow to cool before cutting into 3 inch squares.
