4 ounces smoked ham sausage, finely chopped
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
3/4 cup minced red bell pepper
2 cups shredded cabbage
1/2 cup shredded Swiss cheese
1 egg
Place sausage in a large bowl. Brown well and drain. Drain grease.
In a large mixing bowl, mix celery, green bell pepper, red bell pepper and cabbage. Spread mixture over mushroom muffin.
Place chicken in a separate large mixing bowl.
Meanwhile, in a small mixing bowl, beat eggs until frothy. Mix egg and celery into mixture.
Preheat oven to 350 degrees F (175 degrees C).
Bake in preheated oven for 20 minutes.
