1 stalk celery, thinly sliced
2 carrots, slightly diced
1/2 teaspoon salt paprika
1 green bell pepper, thinly sliced
1 1/2 teaspoons chili powder (optional)
1 tablespoon pepper seasoning
1 tablespoon vegetable oil (optional)
1 cup beef stock
1 onion, chopped, optional (optional)
1 (.25 ounce) package taco seasoning mix
Preheat oven to 350 degrees F (175 degrees C). Grease 2 6-quart casserole pans.
In a large bowl, mix celery, carrots, parsley, orange juice, bell pepper, chili powder, oil and beef stock. Stir well. Pour more oil into a separate saucepan if sauce is too thick.
Bake uncovered in the preheated 350 degrees F (175 degrees C) oven for 30 minutes. Slice meat; stir into 1 cup celery mixture.
