2 1/3 cups (3/4 ounce) packages frozen mixed vegetables
1/4 cup hot water
1/2 lemon, juiced
1/4 teaspoon salt
1 teaspoon orange marmalade
2 cups maraschino cherries, sliced and pitted
1 cup sliced mushrooms
2 tablespoons cold lemon juice
In a large pot, combine mixed vegetables, hot water, lemon juice, and salt. Bring to a boil. Cover, reduce heat to medium-low, and simmer for 20 minutes.
Preheat oven to 400 degrees F (200 degrees C).
Stir in the orange marmalade and lemon juice. Set aside to cool.
Cut the cherries into round slices, place them round on top of the mixture. Place mushrooms and cherries over the sliced pecans in the pot.
Carefully cover the pot, and place cookies in the oven. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool, and frost with chocolate glaze.
