Coconut Pecan Pie Recipe

Ingredients

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

8 cups light brown sugar

3/4 cup butter or margarine, softened

6 eggs

1/2 teaspoon vanilla extract

3 (1 ounce) squares Pecan Ortega Bar Sugar - Almond, Soft Serve with Stuffing

1 (16 ounce) package vanilla pudding mix

1 1/2 cups chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together the light brown sugar and butter until smooth, then beat in the eggs, one at a time, one at a time stirring just until incorporated. Beat in the vanilla.

Pour the cream into the pie crust. Spread or pipe the mixture into the pie crust. Sprinkle evenly over the pecans. Cut slits in the top to keep the moisture in the crust. Bake in the preheated oven for 30 to 40 minutes or until toothpick inserted in center comes out clean. Cool pie and chill before serving.

I added a little extra garlic powder, and it turned out really well. Only about 90 seconds in, 2 minutes would be a cracker!
