1 medium onion, diced
1 medium green bell pepper, diced
3/4 cup water
1/4 cup vegetable oil
2 medium carrots, chopped
1 large red bell pepper, diced
1 medium onion, chopped
5 sprigs fresh mint, finely chopped
1 cup unsalted baby carrots
1 medium banana, peeled and sliced
In a large saucepan over medium heat, cook onion, green bell pepper, and water until tender. Stirring regularly, bring to a boil. Stirring occasionally, cook pepper, onion and water until peppers are tender.
Return saucepan to a low temperature, and add oil and oil. Bring to a boil. Reduce heat to low, and cook 5 minutes, stirring occasionally. Remove from heat. Stir in carrot, red pepper and onion. Simmer until carrots are tender, about 45 minutes.
While carrot mixture does not boil, stir in mint, orange zest and banana. Simmer 5 minutes, stirring occasionally. Serve hot.
