1/2 cup crushed pepitas
1 tablespoon white sugar
3 eggs, beaten
1 (8 ounce) package cream cheese, softened
1 1/2 cups brown sugar
1 teaspoon green food coloring
3 (8 ounce) packages cream cheese, cream or white, softened
1 teaspoon vanilla extract
3 cups chopped pecans
In a large bowl, mix pepitas, sugar, eggs, cream cheese, brown sugar, green food coloring and pecans. Shape into a jelly-like consistency. Chill for several hours or overnight.
Preheat oven to 375 degrees F (190 degrees C).
Remove pepitas from refrigerator.
Spread pecans on bottom and sides of 8x8 inch cookie sheet. Bake for 20 minutes in the preheated oven. Remove from baking sheet and let cool on wire rack.
