1 cup white sugar
1 cup margarine, melted
2 eggs
1/2 cup milk
1 1/2 tablespoons vanilla extract
2 tablespoons cornstarch
2 teaspoons bourbon
1 1/2 tablespoons lemon juice
1 teaspoon vanilla extract
In a medium bowl, cream together sugar and margarine; beat in eggs and milk. Mix in 3/4 cup margarine mixture, 1 teaspoon at a time, beating after each addition just until incorporated.
Stir in vanilla extract and lemon zest. Beat well, stirring frequently until batter is the consistency of pudding. Pour into greased, 9 x 13-inch baking dish.
Bake in preheated oven for 1 hour, or until center of the dish is just barely bubbly. Cool completely before cutting into squares.
