1 (3 ounce) package cream cheese, softened
1 cup mayonnaise
1 tablespoon orange juice
1 teaspoon vanilla extract
COMBINE cream cheese, mayonnaise, orange juice and vanilla in small bowl. Mix well; refrigerate for 2 hours. Remove from refrigerator, allowing mixture to rest thoroughly. Refrigerate, stirring occasionally, for 10 minutes.
REMOVE apricot halves from pits. Place apricot halves on a plate. Brush with peanut butter mixture. Season with salt and pepper. Repeat with remaining apricots. Refrigerate for 10 minutes. Refrigerate 4 hours or overnight. Serve garnished with peanut butter salad.
