Chocolate Orange Gingerbread Cookies Recipe

Ingredients

1 cup butter

1 cup packed light brown sugar

2 eggs

1 teaspoon vanilla extract

1 teaspoon lemon zest

1/2 cup chopped pecans

1/4 cup white sugar

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon vanilla extract

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup flaked coconut

2 cups rolled oats

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a large bowl, cream together the butter and brown sugar until smooth. Beat in eggs, one at a time. Combine the flour, baking soda and lemon zest; beat into the creamed mixture alternately with the pecans. Stir in the sugar, coconut, oats and orange zest. Drop by spoonfuls onto the cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow to cool on baking sheets for 2 minutes before transferring to a wire rack to cool completely.

Really good recipe! They were all extra crispy and wonderful. Only calorie counted was beans, which i didnt count but left out so it made perfect sense. Nutrition facts would normally dictate you shouldnt use iodised salt but this served my familyand taste great! Thx for the recipe!!! :D
