1 cup butter
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon lemon zest
1/2 cup chopped pecans
1/4 cup white sugar
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 cup flaked coconut
2 cups rolled oats
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter and brown sugar until smooth. Beat in eggs, one at a time. Combine the flour, baking soda and lemon zest; beat into the creamed mixture alternately with the pecans. Stir in the sugar, coconut, oats and orange zest. Drop by spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow to cool on baking sheets for 2 minutes before transferring to a wire rack to cool completely.
