1 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons butter, melted
1 cup milk
1 egg
1 teaspoon vanilla extract
1 cup fresh lime juice
Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
Combine flour, baking powder, baking soda and salt; set aside. In a medium bowl, cream together the butter, sugar and milk until light and fluffy, stir into the creamed mixture alternately with the vanilla and lime juice. Drop by tablespoons onto the prepared cookie sheet.
Bake for 12 to 14 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
