Easy Chili Cooked in Texas Recipe

Ingredients

4 tablespoons vegetable oil

2 large onion, seeded and sliced into 1/2 inch rounds

4 black peppers, seeded and seeded

3 (10 ounce) cans chili beans, rinsed and drained

1 (.75 ounce) package chili seasoning mix

1/2 cup canned crushed blue cheese taste

1/2 cup shredded Cheddar cheese

1 (10 ounce) can sliced mushrooms, drained

2 teaspoons shortening

2 tablespoons chili powder

Directions

In a large skillet over medium heat, stir together the oil, onion and peppers; saute for 5 minutes, until tender. Set aside and add the chili beans, chili seasoning mix and crushed blue cheese. Stirring constantly, cook and stir until the chili mixture reaches a light, thick gray. Season with mushrooms, shortening, milk and chili powder. Remove from heat and stir in cheese and mushroom mixture. Cook over medium heat until cheese mixture is melted and bubbly, about 5 minutes. Remove from heat and stir in crushed blue cheese and mushrooms. Serve hot, spooning mixture over top of whatever bacon you like.
