1 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 cup confectioners' sugar
3 cups sifted confectioners' sugar
1 cup eggnog
3/4 cup rum
1 cup chopped walnuts
Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, cream together the butter, white sugar and eggs until smooth. Stir in the vanilla extract and flour. Mix in the flour mixture until well blended. Stir in the confectioners' sugar, eggnog and rum. Spread the batter into the prepared pan.
Bake in the preheated oven for 60 to 65 minutes, or until the top of the cake springs back when gently pressed. Allow to cool completely before frosting.
