1/2 cup butter
1 1/4 tablespoons butterscotch extract
1/4 cup heavy cream
2 cups white sugar
1 1/2 tablespoons cornstarch
1 1/4 teaspoons vanilla extract
1 tablespoon corn syrup
1 1/2 teaspoons butter or margarine
1 1/2 cups milk
1 egg
1 1/2 cups milk, room temperature
Beat butter and butterscotch extract in a small bowl to make butterscotch meringue. Heat cream, sugar and cornstarch in another small bowl. Whisk together corn syrup, butter, milk and egg in a small bowl, then pour mixture over butterscotch meringue in a large bowl. Spread mixture into prepared pan.
Bake in preheated oven for 60 to 90 minutes, until wooden picks inserted in center of pan come out clean.
