4 medium zucchini
2 medium onions, thinly sliced
3 pounds Italian sausage, thinly sliced
1 1/2 pounds Italian sausage, thinly sliced
1 onion, thinly sliced
1 carrot, sliced
3 stalks celery, thinly sliced
1 medium green bell pepper
2 medium yellow bell pepper, seeded and halved
1 medium green bell pepper, seeded and halved
1 teaspoon minced fresh oregano
1/3 cup olive oil
2 tablespoons chopped fresh lemon juice
1 table spoon chili seasoning (optional)
2 cloves garlic, minced
In a large large pot, bring tomato juice and water to a boil, and reduce heat to low. Add zucchini, onions, Italian sausage, Italian sausage, bell pepper, yellow pepper, olive oil, lemon juice and chili seasoning. Cover, reduce heat to low, and simmer uncovered 1 hour but do not remove from heat.
