Moon Cake Recipe

Ingredients

4 egg whites

2 1/2 cups white sugar

2 teaspoons baking powder

1 teaspoon vanilla extract

1/4 teaspoon salt

1 (15 ounce) can marshmallow creme

3 cups milk

1 (8 ounce) package cream cheese, softened

1 cup finely chopped black walnuts

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease and flour one 4-3/4 cup muffin liners or line with paper muffin liners.

In a large bowl, beat egg whites until foamy. Mix sugar, baking powder, and vanilla. Beat in salt and marshmallow creme, then mix in milk, 1 cup at a time, beating well after each addition.

Bake the foil-lined muffins in preheated oven for 10 minutes, or until deep browned. Before serving, stack the muffins on top of one another.
