Lemon Tarts Recipe

Ingredients

25 ounce egg whites

3 egg whites

1 (10 ounce) package lemon-flavored disk cereal, unbleached

15 ounces heavy cream

1/3 cup white sugar

1/2 teaspoon vanilla extract

Heels not included

Directions

After whipping the egg whites, combine the cereal with softened butter. Fold in the cooked egg whites until no streaks remain. Spread the mixture into 12 greased pastry balls. Cut each pastry ball into 2-inch wide cross hairs, leaving the long side attached to prevent leaking.

Frost each pastry ball with 1/3 cup of the heavy cream, then sprinkle with 1/2 teaspoon vanilla. Press the edges together to seal. Bake in the preheated oven for 28 to 36 minutes, or until golden brown. Cut with a pastry bag adorned with confectioners' icing, shake and set aside.
