1/4 cup butter
1/3 cup packed brown sugar
1 cup unsweetened cocoa powder
4 tablespoons distilled white vinegar
1 teaspoon salt
1/2 teaspoon ground black pepper
4 pounds beef brisket
2 slices bacon
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon dried sage
1/4 teaspoon dried chives
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
Heat butter in a large saucepan over medium heat. Bring to a slow boil 1 tablespoon brown sugar, stirring constantly. Reduce heat to low; cook, stirring constantly, for about 2 minutes. Remove from heat, stir in cocoa, vinegar, salt, pepper, and sage. Return mixture to a slow boil, stirring constantly, for about 2 minutes. Remove from heat; stir in cumin, salt, pepper flakes, sage, and chives. Pour sauce over beef, cover, and cook 25 minutes. Remove from oven and let rest 20 minutes before slicing.
