Fresh-Coconut-Pecan Cookies Recipe

Ingredients

2 tablespoons vegetable oil

1 pound ripe pears - peeled, seeded and chopped

1 cup butter, softened

2 eggs

1 teaspoon vanilla extract

1 teaspoon almond extract

1 teaspoon white sugar

1 pinch salt

1 cup sharp brown sugar

1 cup straight lemon juice

1/2 teaspoon orange zest

1 pinch ground nutmeg

2 teaspoons banana split

Directions

In a medium bowl, mix oil, pears, butter, eggs, vanilla extract, almond extract, white sugar, salt, sweetener and 1 cup chopped pears. Beat until blended. Pour into 9x9 inch pan or greased 9x13 inch pan. Press crust over bottom of greased pan. Cool completely. Place fruit on serving plate. Cover, and refrigerate overnight. Cut into desired shape. Serve at room temperature. 10

In a large bowl, mix lemon juice, orange zest, orange peel and white sugar. In a small mixing bowl, mix lemon juice, orange peel and brown sugar. Mix in lemon juice, orange zest, and orange peel. Gradually stir lemon juice into lemon juice mixture. Spread evenly over pie. Cover, and refrigerate overnight. 8

Prepare the brown sugar with the following ingredients:

1 tablespoon orange juice concentrate

1 teaspoon vanilla extract

1 tablespoon brown sugar

1/4 cup cold milk

1/4 cup butter

Preheat oven to 350 degrees F (175 degrees C).

Prepare the lemon syrup by blending together granulated sugar, milk, butter and sugar. Drizzle mixture over pie.

Remove pan from refrigerator and brush pie with brown sugar syrup mixture, then continue to place pan on rack in refrigerator. Cover, and refrigerate overnight. Cut into desired shapes and serve hot.
