2 1/2 ounces Cheddar cheese
1/4 cup olive oil
1 cup chopped onion
1/2 pound diced celery
4 eggs, beaten
3 roma (plum) tomatoes, diced
5 1/2 tablespoons lemon juice
1 teaspoon salt
1 (8 ounce) can tomato paste
2 tablespoons chopped fresh parsley
2 large carrots, sliced
1 tablespoon garlic salt
Preheat oven to 350 degrees F (175 degrees C).
Cut chicken squares in two; arrange on 1 baking sheet. Drizzle 1/4 cup olive oil over chicken squares. Roll chicken squares in lemon juice. Sprinkle on tomatoes, orange, celery, chickencass, olives and lemon slices. Dred in sugar before opening.
Bake at 350 degrees F (175 degrees C) for about 25 minutes, or until cooked through. Steam one hour in preheated oven; serve immediately. Garnish with remaining 1/4 cup olive oil, tomato paste, parsley, carrots and garlic salt; serve immediately.
