2 teaspoons finely chopped fresh parsley
1 teaspoon olive oil
1 1/2 cups chopped onion
2 teaspoons lemon zest
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon dried rosemary
1 teaspoon chopped fresh parsley
4 slices bacon
In a small bowl, mix the parsley, olive oil, onion, lemon zest, garlic, oregano, salt, rosemary, parsley mixture, bacon and parsley mixture. Cover and refrigerate mixture overnight.
When ready to cook, heat oven to 375 degrees F (190 degrees C). Heat oil in a medium skillet over medium heat.
When bacon is cooked, remove from steamer and place in a medium bowl. Return to pan and add lemon zest, garlic, oregano, salt, rosemary, parsley mixture and bacon. Pour over pan. Serve hot or cold.
I really liked this sandwich. It was super easy and quick. I found the peanut oil to be a little drying so I left it at room temperature but it was still great. I think I'll make this again.
