1 (4 ounce) can chicken broth
1 (10 ounce) package frozen mixed vegetable mixture
1 (4 ounce) can whole kernel corn, drained
1 (10 ounce) can cream-style corn, drained
1 (10 ounce) package shredded Cheddar cheese
1/2 cup shredded lettuce
1 cup chopped tomatoes
Preheat oven to 350 degrees F (175 degrees C).
In a large saucepan bring 4 boiling water to a boil. Add chicken broth and stir while stirring to melt chicken, reduce heat to low, cover and simmer 5 minutes.
In a small bowl, mix mixed vegetable mixture with corn and cream-style corn. Pour chicken mixture over chicken mixture, stirring until coated. Transfer to a 9x13 inch baking dish.
Layer turkey over chicken mixture. Top with lettuce, tomato and cheese. Pour over chicken mixture.
Cover baking dish with foil and bake at 350 degrees F (175 degrees C) for 20 minutes. Remove foil and bake 15 minutes more, covered. Cool, and serve over hot cooked tortilla.
