1 large chicken, 8 ounces
1 large onion, chopped
1 cup chopped celery
1/2 cup chopped green bell pepper
8 ounces cooked and diced corn
2 tablespoons olive oil
1 (15 ounce) can pecan halves
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Place chicken pieces in a shallow baking dish. Dredge in the olive oil, then place peppers in a separate shallow baking dish. Brush chicken with 2 tablespoons of the remaining olive oil. Season with salt and pepper.
Arrange corn halves on a large platter. Salt and pepper to taste.
Bake uncovered in the preheated oven for 45 minutes, or until chicken is cooked through.
