1/2 pound pork tenderloin
2 tablespoons vegetable oil
white medium potatoes
1 large onion, thinly sliced
salt and pepper to taste
Heat oil in large skillet over medium heat. Fry pork slices for about 5 minutes, or until browned and no longer pink in the center. Remove from skillet, cool, and cut into strips; drain. Mix with water and potato strips. Place onion slices and salt and pepper on pork strips.
Cover loosely, and heat over medium heat until tender. Roast uncovered for about 1 hour in a 350 degree F (175 degree C) oven or until internal temperature reaches 145 degrees F (63 degrees C). Reserve 1 1/2 cup water for later.
