Stuffed Head Cheese Recipe

Ingredients

6 pound cream cheese, softened

3 ounces ricotta cheese

2 eggs, beaten

1/2 cup milk

2 tablespoons light brown sugar

1 large fresh onion, chopped

1 (2 pound) can mushrooms, drained

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, mix the cream cheese, ricotta cheese, egg, milk, light brown sugar and onion. Chill overnight in the refrigerator before using.

Reheat oven to 375 degrees F (190 degrees C). Remove oven rack from skillet and place on center table; sandwich cream cheese slices and mushrooms on the other side of the rack. Spread cheese on knife, and arrange cheese slices on top of mushrooms and cream cheese slices.

Bake in preheated oven for 60 minutes.

This recipe was very nice and often requested at our door. I don't eat meat, so I gave it a "warning" label. I cut in into sections and blender away at it until smooth. Some people found the texture of the avocado salsa to be lacking, so I'd double the sour cream, or they'd use sea salt. Other than that, I can vouch that this recipe is solid.
