2 boneless, skinless chicken breast halves
1/4 cup olive oil
1/4 cup lemon juice
1/3 cup Italian seasoning
1/2 teaspoon seasoning salt
1 onion, diced
3 cloves garlic, minced
1 cup diced celery
1 cup diced carrots
1 cup diced fresh mushrooms
1 (15 ounce) can Italian-style pasta
1/2 cup diced onion
1/2 cup Italian dressing
1/2 cup Italian rum
1 (10.5 ounce) can diced tomatoes with green chile peppers
Heat olive oil in a large skillet over medium heat. Add lemon juice, Italian seasoning, seasoning salt, onion, garlic, celery, carrots, mushrooms and pasta. Saute for about 10 minutes, or until chicken is cooked through and juices are clear.
Stir in tomato sauce. Pour mixture over chicken mixture. Cook and stir over medium heat for 5 minutes, stirring occasionally.
