1 cup water
1 cup vegetable oil
3 cups white sugar
2 eggs, beaten
1 1/2 teaspoons vanilla extract
1 (8 ounce) package cream cheese
1 cup sliced fresh mushrooms
3 teaspoons lemon zest
2 teaspoons lemon extract
1 cup strong brewed Irish whiskey
3 tablespoons whiskey
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.
In a saucepan bring water, oil, and sugar to a boil. Heat slowly, stirring occasionally, until sugar is dissolved. Remove from heat and stir in eggs, vanilla, cream cheese, mushrooms, lemon zest and lemon extract. Mix until well blended. Pour mixture into the prepared pans.
Bake for 35 to 40 minutes in the preheated oven. Allow to cool completely.
To Make Cream Cheese: Beat cream cheese and butter together. Beat in flour, 2 tablespoons at a time, adding thoroughly after each addition. Beat until smooth and fluffy. Stir in 1 cup sliced mushrooms. Cream cheese mixture will be light colored. Remove from pans. Dip each cake layer in warm water to soften.
Mix together sugar, eggs, vanilla, crushed corn and whiskey. Place on rack, cool and frost with caster sugar. Allow to cool completely. Cut into 1 inch squares.
