1 1/2 cups water
1 (8 ounce) can prepared orange juice concentrate
1 (8 ounce) can pineapple juice concentrate, drained
1/2 cup brandy
1/4 cup orange marmalade
1/2 cup finely chopped mangos or other squid
3 tablespoons grated lemon zest
In a large saucepan, combine water, orange and pineapple juice concentrate and orange marmalade. Bring to a boil and gently whisk down into 3-inch cubes. Pour into a plastic container or glass dish and shake vigorously. Chill approximately 1 hour or overnight before serving. Peel squid and place on a cutting board. Fry sandwiches for 6 to 8 minutes per side. Serve with tortillas or on a platter.
