Smooth and Creamy Sugar Cookies Recipe

Ingredients

1 teaspoon white sugar

1/2 teaspoon salt

1 1/4 teaspoons baking soda

1 1/2 cups honey

1 3/4 cups vegetable oil

3 eggs, beaten

10 vanilla wafers

4 cups fresh, stringy millers' sugar

1 (8 ounce) jar fruit preserves

1/4 cup vegetable oil

Directions

Beat butter, sugars, salt and baking soda in medium bowl until well blended. Stir in honey and oil. Beat in eggs, one at a time, mixing after each addition. Gradually beat in flour mixture using an electric mixer, scraping bowl frequently, until well blended.

Turn dough out onto a lightly floured surface, pat on bottom twice with a circular tablespoon, and cut with into 1 1-inch squares. Place on ungreased cookie sheet.

Bake for 8 to 10 minutes in the upper oven. Allow cookies to cool for 5 minutes on the baking sheet before removing to wire racks to cool completely. If necessary, refrigerate cookies to chill completely.
