1 (19 ounce) package Peaches, pitted and cut into 1 inch squares (about 80 peaches)
1 cup mayonnaise
3 tablespoons lemon juice
4 eggs
1 teaspoon vanilla extract
1 teaspoon ginger extract
1/2 teaspoon lemon zest
1 3/4 ounces cream cheese, softened
1/2 cup flaked coconut
Preheat oven to 375 degrees F (190 degrees C).
Slice peaches in half and scoop peaches onto a large baking sheet. Crush pecans with your hands.
In a large bowl, whisk together the mayonnaise, lemon juice, eggs, vanilla extract, ginger, and lemon zest. Stir pecans into the mixture. Place them 2 inches apart onto a 4 human-size cookie sheet.
In a medium bowl, combine cream cheese and coconut.
Bake for 12 to 15 minutes in the preheated oven. Allow to cool completely before using. Cut into individual squares when cool and serve.
