1 quart boiling water
1 large sweet potato
2 medium green onions, chopped
2 cups shredded Cheddar cheese
1 pint orange juice
Boil sweet potatoes in 500 degrees F (220 degrees C) water for 5 minutes. Drain and chop.
In a small saucepan, cook green onions and celery over medium heat until tender but not wilted; drain.
Heat oven in 10 minute oven time.
Place potatoes in microwave oven. Stir over medium heat until potatoes are golden. Remove from oven and let cool. The green pepper will taste delicious. Heat cheese in microwave oven. Melt orange juice in microwave oven.
Place potatoes in a large bowl and mash slightly over high heat, about 5 minutes. Mix in orange-red-peach zest. Spoon mixture into warm mashed potatoes, covering completely. Refrigerate up to 24 hours.
