2 eggs
1 tablespoon lemon juice
1/4 teaspoon onion powder
3 tablespoons vegetable oil
1 teaspoon cornstarch
Preheat an outdoor grill for high heat and lightly oil grate.
In a large bowl, mix egg yolks and lemon juice. Stir egg yolk mixture into lemon mixture; stir until soft peaks form.
Heat 1 tablespoon vegetable oil in a small skillet over medium heat. Pour about 3 tablespoons of the egg mixture over grill before stirring. Grill uncovered for 10 minutes on each side.
Reduce heat to medium and cook an additional 10 minutes in the microwave. Grill uncovered until vegetables have a golden brown color, about 4 minutes per side. Garnish lightly. Remove from heat. Spread carrot mixture over warm grill and sprinkle with lime-juice zest. Place remaining egg yolk mixture over grill. Allow to heat.
Stir dry cornstarch into egg mixture with lemon juice. Remember to stir egg yolk mixture after each use.
