Stuffed Italian Fish Sausage Recipe

Ingredients

3 tablespoons olive oil

1 pound Italian sausage, casings removed

2 large onions, chopped

1 medium head cabbage, chopped

4 ounces green bell pepper, chopped

1 tablespoon butter

7 slices Cheddar cheese

Directions

Lightly oil a large baking sheet.

Heat olive oil in a large saucepan over medium heat. Saute sausages for 10 minutes, then sprinkle the sausage with brown sugar. Remove from pan and set aside to cool.

Slice the sausage into thin slices, and cut into 1/2 inch pieces. Heat remaining olive oil in saucepan over medium heat. Cook sausage until wilted (about 5 minutes). Remove sausage from skillet and place on a cooling platter.

Place onions, celery, cabbage, green pepper, 2 tablespoons butter and cabbage over sausage. Reduce heat to medium, add cheese and cook until cheese is melted.
