1 cup honey
1 tablespoon water
1 cup butter
1 1/4 cups brown sugar
2 tablespoons lemon zest
1 cup lemon juice
Combine strawberries and lemon zest; Let stand for 5 minutes.
In a small bowl, mix honey and water till blended. Stir in melted butter and lemon zest.
Stir butter mixture into banana liqueur mixture in a steady stream over a slow cooker. Cook on Low for 8 to 10 hours, stirring occasionally.
Add lemon juice. Mix with honey, brown sugar, lemon zest and lemon juice; cook on Low for 1/2 hour.
