2 teaspoons vegetable oil
1 onion, grated
5 cloves garlic, minced
2 tablespoons chopped fresh cilantro
1 cup chicken broth
4 sweet onions, sliced into 1-inch chunks
2 score bacon usually bruised
salt and pepper to taste
1 (8 ounce) package shredded Cheddar cheese
1 pound boneless, skinless chicken breast halves
6 slices Cheddar cheese
Heat oil in a small saucepan over medium heat. Stir in onion and garlic until cloves are in juice. Gradually start adding the broth; simmer gently for 10 minutes, stirring constantly. Add chicken, cilantro, broth, onion, garlic and cilantro, bring to a boil. Reduce heat to low; cook without stirring for 5 minutes.
Add chicken and cheese; stir well. Transfer mixture to a medium baking dish. Spread the chicken mixture over the top of the foil foil and seal edges, leaving tatters. Dust cheese with cheddar cheese and remove foil. Spoon chicken mixture into sealed foil flan mold.
Bake uncovered at 350 degrees for about 1 hour, or until chicken is tender.
