2 eggs, beaten
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 1/2 cups pumpkin puree
1 cup vegetable oil
2 tablespoons white sugar
2 cups pumpkin puree
In a large bowl, beat eggs. Stir in flour, baking powder, baking soda and salt. Mix into egg mixture until blended.
Heat oil in a large skillet over medium heat. Stir fry pancakes until golden brown. Drain on paper towels. Serve hot.
