1 (14 ounce) can diced pineapple with juice
1 cup sliced bananas
1 (11 ounce) can sliced clams, drained
1 cup sliced onion
2 cups shredded Cheddar cheese
salt and pepper to taste
Place all ingredients in a large bowl and toss well. Cover and refrigerate several hours, allowing flavors to blend.
Preheat oven to 350 degrees F (175 degrees C).
Spread pineapple over bottom of foil baking pan, making sure that whole piece is completely covered. Bake in preheated oven for 30 minutes.
Meanwhile, place bananas over fruit slices and sprinkle with onion, cheese, salt and pepper. Remove fruit from pan, slice and return to the pan. Mix gently with fingers, cover with foil, and bake for about 30 minutes on the lowest setting of the oven.
Quite good, tangy flavour. When I do frittatas in the future, I will try adding garlic powder to see if it improves the texture.
