1 (10 ounce) package frozen mixed vegetables
1 (1 ounce) package chili with green chile peppers, drained
1 (1 ounce) package chili with green bell peppers and onion, drained
1/2 pound chicken breast meat
1/2 onion, thinly sliced
4 cloves garlic, minced
Place mixed vegetables in the bottom of a medium saucepan, and cover with water. Bring to a boil. Cover, and cook for 6 to 8 minutes, stirring constantly.
Remove the vegetables from the water, and place into sterilized ice water. Cover, and allow to cool. Heat oil over high heat in a large skillet over medium heat.
Saute the chili over medium heat for 10 minutes, stirring frequently. Stirring often, heat the broth through.
Add chicken to the chili, green chile peppers, bell peppers, onion, garlic, and mushroom. Mix together and cook over medium heat for about 1 minute.
