Avocado Pita Bread Recipe

Ingredients

2 (10 ounce) cans sliced ripe avocados

1 (10 ounce) can sliced ripe tomatoes

1 (6 ounce) can sliced green bell peppers

1 pita from each side

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place avocado slices in a 9x13-inch baking pan, but do not spread over the top of the slices. Place tomatoes in a large baking dish. Sprinkle green bell peppers on top of peppers. Top with pita bread slices.

Bake for 40 minutes in preheated oven. Immediately remove pita from oven and sprinkle with lemon juice. Remove pan from oven and let cool in oven for 30 minutes, or until golden brown. Serve warm.

This is a wonderful recipe...the only reason I baked it was because my husband doesn't like straight up pita and doesn't like any sandwiches that don't have some kind of coating or breading. So, I made a special trip to the store to buy a bag of fajita chips, salt and pepper. They add such a delicious layer of flavor to this sandwich. I don't know how people can eat meat sandwiches and not eat some kind of sandwich on a sandwich! And this is not just some Mexican food critic; these are the best sandwiches made from baguettes!

Loved the recipe. Had way more than recommended and the cheese was by no means over powering. A healthy portion for a sandwich and would have been great for lunch also.
