Frosty Cupcakes Recipe

Ingredients

1/2 cup all-purpose flour

1 cup packed light brown sugar

1/4 teaspoon baking soda

3 tablespoons margarine

1 (.64 ounce) package vanilla flavored cake mix

1 cup all-purpose flour for decoration

2 teaspoons baking powder

1 1/2 cups white sugar

1/3 cup margarine

3/4 cup margarine

1 1/4 cups milk

3 egg whites

2 tablespoons lemon juice

1/2 cup butter, softened

Directions

In a medium bowl, mix brown sugar, baking soda and margarine.

In a large bowl, mix vanilla cake mix, flour, margarine, white sugar, margarine and milk. Mix this mixture until evenly over the bottom and sides of two 8 inch springform pans. Arrange the pieces in a single layer on the prepared pans.

Bake in preheated oven for 25 minutes. Remove and spread frosting without frosting. Allow cookies to cool completely on the baking sheets. Slice 1 or 2 pieces and roll in margarine to coat.

While waiting for frosting to cool, cool the remaining 1/2 cup sugar in microwave or in the glass bowl to remove from its liquid form and place on top of frosting mixture. Spread icing over cooled cookies.

While waiting for frosting to cool, whip egg whites according to package instructions and place 1/2 teaspoon lemon juice in a small saucepan. Stir constantly until whipped. Gradually add 1/2 cup margarine and milk, continuing to whip until slowly thickened. Slowly drizzle lemon juice over whipped egg whites of cookies.

Remove cookie from pans and place on greased cookie sheet. Cool completely on waxed paper. Replace with fresh cookie, seal edges and cut pastry. Chill for several hours or overnight. Once chilled, cut into squares.
