1 1/4 pounds apples - peeled, cored and sliced
2 eggs
1 cup white sugar
1 cup packed light brown sugar
1 mug pumpkin puree
1 cup vegetable oil
1 cup white sugar
1 1/2 cups water
3 teaspoons pumpkin pie spice
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, combine apple puree, brown sugar, sugar, pumpkin and oil.
Bring a large pot of salted water to boil. Add potatoes and cook them until just tender but not mushy; drain.
Place apples and potatoes in a large bowl, mix them well with a fork. Mix eggs and cup reserved sand outside with apple stock broth.
Stir together pumpkin, brown sugar, pumpkin pie spice and pumpkin puree. Pour into baked pie shape. Flatten with a knife.
Bake for 45 minutes in the preheated oven. Remove from oven and serve immediately.
