The above is not a typical breakfast casserole. There are no eggs, no milk, and the recipe calls for cooking the ham and cheese in 1/2 cup of oil until shimmering. In fact, with the exception of the last 5 minutes, there is none to speak of. The eggs are there merely to add more flavor. If there are no issues, then there was a mix-up in the mixing process. I believe it was a combination of the last 5 minutes baking time (I used a baking dish with a slightly larger muffin section) and the oven (a gas oven works, too). I have restored this recipe several times and while the changes I made were minor, the flavor was astounding. I believe because the vegetables were so fresh and plentiful.
